Recipe: Curry Turkey Meatballs
Packed with flavor, these are great served over rice or with stir-fried veggies for a light dinner option!
1 Lb. ground turkey (even 98% lean works great)
1 egg, beaten
1 cup panko
1/2 cup minced yellow onion OR green onion
1/4 cup (about 1/2 spice jar) Coconut Curry Seasoning Powder
1 1/2 tsp. dry minced garlic OR 3 cloves fresh garlic, minced
1 tsp. ginger powder OR 1 Tbls. gresh grated ginger
1 tsp. soy sauce powder OR 1 Tbls. liquid soy sauce
1/2 tsp. ground black pepper
~ Knead together all ingredients by hand just until mixed.
~ Grease a cookie sheet or air fryer rack. Roll mixture into walnut-sized balls and place 1" apart on the baking sheet.
~ Bake in a 400 degree oven for 23 minutes or a 400 degree air fryer for 20 minutes.

This simple twist on a classic dish can change the mood of the entire meal. We serve it with ham and grilled pineapple.
4 sweet potatoes, peeled and cut into 1" pieces
1/2 cup (about 1 spice jar) Coconut Curry Seasoning Powder
1/4 cup butter OR margarine
1/4 cup packed brown sugar
1/4 cup heavy whipping cream
~ Place potato pieces in a large pot and cover with at least 1 inch of water. Bring to a boil over medium heat and simmer, until fork tender, about 15-20 minutes.
~ Drain the potatoes well and return to the pot (no heat).
~ Using a hand masher or mixer, blend the potatoes until smooth. Add remaining ingredients and blend until combined. Serve hot.
~ Taste and season with additional Coconut Curry Seasoning Powder if necessary.
