Recipe: Coconut Hot Chocolate Mix
This rich and creamy drink mix is a great homemade gift, sure to be appreciated and loved by all. You'll probably want to make extra to keep for yourself ;)
1 1/3 cups coconut milk powder
1 cup instant dry milk
1/2 cup granulated sugar
1/3 cup cocoa powder
~ Sift together all ingredients.
~ Makes a little over 3 cups of mix, which makes about 12 servings of hot chocolate.
~ To make hot chocolate, whisk together 1 cup hot water with 1/4 cup mix.
Recipe: Mint Chocolate Chip Brownies
Rich, intense chocolate brownies with the tiny green mint and chocolate chips.
3 cups granulated sugar
1 cup melted butter OR margarine
1 Tbls. vanilla extract OR Vanilla Powder
4 eggs
1 1/2 cups all-purpose flour
1 cup Cocoa Powder
1 tsp. Salt
1 cup Mini Mint Chocolate Chips
~ In a large bowl, stir together sugar, butter, and vanilla. Beat in eggs, one at a time, until thoroughly mixed.
~ Sift together the flour, cocoa, and salt into a separate bowl. Gradually stir this mixture into the sugar mixture until combined.
~ Gently fold in the mint chips.
~ Spread the batter evenly into a greased 9" X 13" baking dish.
~ Bake in a preheated 350 degree oven until a toothpick inserted into the center comes out clean, about 35 - 40 minutes.
~ Cool brownies in the pan completely before cutting.
